  • 4 L Avalon Dairy Homo Milk
  • 2 L Avalon Dairy Buttermilk
  1. Add salt for savory applications.
  2. Bring homo Milk and butter milk up to exactly 185F, slowly.
  3. Strain in triple layered cheese cloth lined sieve, hang for 10 minutes or until desired consistency is achieved.
  4. Reserve for service.
Recipe Notes

Freshly made ricotta cheese is far superior to any ricotta that you can buy! Serve with warm bread, a little cracked black pepper and wildflower honey.
