Frittata Muffins

Ingredients

  • 3/4 cups Avalon Organic Balkan-Style Yogurt
  • 12 Eggs
  • Handful spinach chopped
  • Half red bell pepper diced
  • 1/3 cups Avalon Organic Aged Cheddar shredded
  • 1/3 cups Avalon Mozzarella Cheese shredded

Instructions

  1. Wisk yogurt with eggs.
  2. Mix in chopped spinach and diced red bell pepper.
  3. Mix in shredded cheese.
  4. Distribute into a buttered muffin pan.
  5. Bake at 350C for 30-35 minutes. Let cool.
  6. Enjoy immediately or put in a resealable bag and freeze for later.

  7. Reheat in the microwave from frozen for 1.5 minutes for a quick breakfast.
